This is a German recipe that I made yesterday...VERY GOOD!
Beverly Rossman...MichiganBACON POTATOES (SPECKKARTOFFELN)
(Made these yesterday & they were GREAT!)7 or 8 Medium sized potatoes-peeled
1/4 lb Bacon-finely diced
1 Medium onion-minced
Water
Salt & pepperWash & peel potatoes & cook whole until tender. (I don't salt my cooking water anymore, trying to cut back on the salt). Drain potatoes in a colander, as soon as potatoes are drained, return to empty pot. Place over low heat & shake pot back & forth, gently, until potatoes are dry & mealy. Cool potatoes & slice. Fry bacon slowly with minced onion. (I fried my bacon first, removed from pan & then fryed onion in bacon grease). When both are fried, add potatoes to frying pan, put bacon & onion back in pan & fry potatoes until browned; you may have to add extra bacon grease, to the fry pan; I did; season with salt & pepper, if you wish.
