I'm not sure if your still looking for a gritswurst recipe but, our family buys gritswurst from Mackenthun's meat market in St.Bonifacious, Minnesota on a regular basis. Their's is made from beef and steel cut oats, rather than pork. It's fairly spicy and quite delicious. Maybe they would share their recipe.
