Gluten free breads

Here are the recipes I have for gluten free breads. The comments enclosed were from the folks that either created or tried the recipes before I got them. I have never tried any of these. The recipes were from bread machine lists probably, so follow your machine's directions. If you make bread by hand, you already know how to handle these.

gluten free bread/attn:Eileen
This is a recipe I made for my daughter who is wheat/dairy free many times. It's a very moist, fluffy egg-type bread.
3 cups gluten free flour (2 parts white rice flour, 2/3 parts potato starch
flour, 1/3 parts tapioca flour)
3 1/2 tsp.. xantham gum
2/3 cup milk powder
1 1/2 tsp.. salt
1 1/4 cup water (add in addition to yeast/water mixture)
1 tsp.. vinegar
3 eggs
1 1/2 tsp. yeast, mixed with 1/2 lukewarm water & 2 tsp. sugar
**mix yeast. water and sugar until dissolved, then combine with remaining ingredients. My apologies to the list, but this is not a bread machine recipe. I've made it in the machine and it usually overflows so I started doing it by hand to make it easier. The flours and xantham gum can be found at health food stores.

Buckwheat and spelt bread
Large loaf
1 1/2 cups water
1/3 cup 100% pure maple syrup
2 tbs olive oil or canola or sunflower
1 1/2 tsp salt
2/3 cup buckwheat flour
4 cups spelt flour
2 tbs tapioca flour or potato starch
2 tbs Xantam gum
1 1/2 tbs Active dry yeast
1/3 cup raisins (optional)
Regular loaf
1 cup water
1/4 cup 100% pure maple syrup
1 1/2 tbs olive or canola or sunflower oil
1 tsp salt
1/2 cup buckwheat flour
3 cups spelt flour
1 1/2 tbs tapioca flour or potato starch
1 1/2 tbs xantam gum
1/2 cup raisins (optional)
Run through bread machine cycle.

GLUTEN FREE WHITE BREAD
MAKES 2LB. LOAF ALL INGREDIENTS AT ROOM TEMP.
3 eggs , beaten
1 2/3 cups water
3 tablespoons canola oil
1 teaspoon cider vinegar
1 pkg. active dry yeast [ 2 1/4 teaspoons]
3 1/4 cup rice flour
2 1/2 teaspoons xanthan gum
1 1/2 teaspoon salt
1/2 cup dry milk powder
3 tablespoons sugar

GLUTEN FREE CHEDDAR CHEESE BREAD
2 POUND LOAF ALL INGREDIENTS AT ROOM TEMP.
3 eggs, beaten
1 3/4 cups water
2 tablespoons canola oil
1 pkg. active dry yeast [2 1/4 teaspoons]
2 cups white rice flour
1 cup brown rice flour
1/4 cup dry milk powder
2 tablespoons sugar
1 tablespoon instant minced onion [optional]
1 tablespoon poppy seed [optional]
3 1/2 teaspoons xanthan gum
1 1/2 teaspoons celery seeds [optional]
1 1/2 teaspoons dried dill weed [optional]
1 teaspoon salt
1 1/2 cup [6 oz] grated sharp cheddar cheese.
