Ham, Potato, Broccoli Casserole
Recipe By : JKM
Serving Size : 68 to 10 potatoes -- diced, 3/4 inch cube
1 bunch broccoli
2 to 3 cups ham -- cubed
1 can cream of mushroom soup
1/4 cup sour cream
1 large onion -- chopped
4 stalks celery -- chopped
1 tablespoon dijon mustard
1 cup grated cheese -- including parmesan
water
salt and pepper
THIS CASSEROLE SHOULD BE MADE A DAY AHEAD.
Cube potatoes and ham. Mix onions, potatoes and celery together. Mix soup, dijon, sour cream, water (at least one can) and cheese in a bowl. Pour over potatoes. There should be a good amount of liquid. Place in covered casserole dish at 350 degrees.
Keep in oven for at least a half hour. Test the potatoes. When they start to get a bit soft, add the ham. Cook until mixture returns to a really good bubble. Add broccoli. Finish cooking. .
WATCH the level of liquid, if it starts to get dry, add water. There should be visible liquid when casserole is done.
SERVE THE NEXT DAY. If served on the same day, the casserole is "soupy". The potatoes aborb the liquid overnight. (In fact, you may have to add some liquid (water or milk - your choice) to reheat it in the microwave. You can reheat in the oven, but why bother.
